TIP: With this meal in one, you have your vegetables and turkey ready to serve.
- In a 5 or 6 quart (4 or 5 L) slow cooker, layer bottom with potatoes, carrots and onions.
- Place turkey thighs on top.
- In a bowl, whisk together soup, stock, garlic, oregano, thyme, salt and pepper; pour over turkey thighs.
- Cover and cook on Low for 6 to 8 hours or on High for 4 to 5 hours.
