Cook Time: 6 hrs
  1. Heat the bacon in a soup pot over medium high heat until crispy.
  2. Add onion, carrots, russet potatoes and salt and pepper. Cook for 5 minutes. Add roasted turkey.
  3. Add turkey stock and dried thyme leaves. Cook for 15 minutes or until potatoes are tender.
  4. Add half and half and frozen kale. Bring back to a slow simmer and cook for 3 minutes. Serve warm.
