Serve with salsa as a dipping sauce. You may also serve with rice, noodles or potatoes for a heartier meal. Give the meatballs a quick spray or glaze of olive or coconut oil before baking if you want a crispier finish.
- Preheat oven to 425°F.
- In a large bowl, add all ingredients except cream cheese. Mix well.
- Cut cream cheese into small cubes/squares and add them into meatball mix. Lightly mix them in.
- Roll approximately 20 meatballs with your mix and spread them evenly across a baking tray.
- Place meatballs in the oven and bake for 20-22 minutes, until the internal temperature reaches 165° F.
